RoVerso is refermented in the bottle deliberately “with the bottom”, unfiltered, 80% Chardonnay based with a dosage of Souvignier Gris (Piwi variety) for the remaining 20%.
Adocchichiusi is a Souvignier Gris, unfiltered, spontaneous fermentation on indigenous yeasts, aged 12 months and subsequent rest in the bottle.
A non-raisin passito made from Souvignier Gris grapes, the result of forgetfulness and the action of
time… a work of art not
replicable.
