Adocchichiusi
AdOcchiChiusi is a still white wine made from Souvignier Gris grapes, a natural fungus resistant piwi variety (acronym of the German word “pilzwiederstandfähig”) that is favourable to the agricultural practices applied every day in Terraprava: use of essential oils, decoctions and tea of nettle and horsetail, biodynamic preparations, green manures and limited use of machinery but overall synthetic chemicals absolutely forbidden.
Souvignier Gris is a crossbreed achieved by the State Wine Institute of Freiburg in 1983 and is included into the Italian national register just from the recent 2014.
Why AdOcchiChiusi: in these years we have ascertained that in lands dedicated to viticulture as the conservative Veneto to propose a relatively new variety of grapes as the Souvignier Gris is not easy because, and forgive the pun, there is a lot of resistance to the resistant. This is why we suggest our consumers to be free and to approach our ethically subversive wine with closed eyes… We tell his story, but only after!
Recommended food pairings: appetizers, cheese, fish and shellfish, Asian cuisine, risottos in general.
