A non-raisin passito made from Souvignier Gris grapes, the result of forgetfulness and the action of time… a work of art that cannot be replicated “The truth is that we forgot this small amount of must from dried Souvignier Gris grapes and advanced by the refermentation of Roverso 2019 in the cellar in an exhausted open barrel and in direct contact with the air for 3 years until tasting I liked the wine so much that I decided to put it in bottle.

The quantity is really small but it is a wine of which I am very proud because it shows how to bring healthy grapes in cellar and allow them to become wine without adding anything and even make them oxidize for 3 years permits to achieve very considerable results.

A wine dedicated to my father (1936 is his date of birth) who is still working and giving the vineyard his energy and tenacity ; the hand on the label is his”.

Recommended with blue cheese, meat offal or simply to enjoy in meditation in the armchair.
